SUSTAINABILITY
"We strive to be a leader in corporate citizenship and take our social responsibilities in empowering our employees and customers, seeking to enrich the quality of life for our local community and serve as a good steward of society and the environment"
Responsible Sourcing
At Inverloch Fish & Chips, we are committed to responsibly sourcing the seafood in every dish on our menu. All fish and seafood species are responsibly sourced upon sustainable codes of conduct approved by the Victoria Fisheries Authority (VFA). The fishing activities and processing of fish products are regularly inspected by VFA fisheries officers.
By purchasing legal and safe fish ingredients, our customers and the local community can benefit from the following:
Protecting the dietary health of our customers
Covering Australian commercial fishing and aquaculture (fish farming) industries
Empowering the fish populations and job security in our country
Reducing the carbon footprints by following the formal guidelines for fishing
Strengthening Victorian fisheries management, which ensures fish resources are shared equitably among all Victorians
Securing Victoria’s excellent reputation for sustainable production of safe fish and shellfish
We also work closely with local suppliers to promote our favourite Gippsland food and drink to as many as possible. Our customers can find Gippsland taste not only in the kitchen but also in the refrigerator for a varied range of local beverages. In addition, we have introduced plant-based burgers this summer to minimize the carbon footprints of the traditional stocking industry.
Environmental-friendly Approach
Inverloch Fish & Chips' codes of conduct cover a number of practical issues that a small family-owned restaurant often faces. We continuously improve the daily operation in the following fields:
Energy Management – Inverloch Fish & Chips have strict procedures for reducing energy consumption. For instance, we refused to use the exterior lightbox since the establishment of the business so that enormous amount of electricity had been saved compared to many other local restaurants. We also take aggressive steps in upgrading our kitchenware and lighting systems to reduce electricity and gas consumption.
Waste Management – Inverloch Fish & Chips carefully avoid food waste in the kitchen. Significant investments have been made to upgrade our fryers so that they are now equipped with filters to reduce the waste of palm oil. We conduct scientific sales forecasts with previous data, holidays, and weather conditions incorporated in the forecast model so that we can effectively reduce the waste of pre-cooked ingredients. We also have our kitchen hands trained for fish filleting so that the overall volume of waste can be reduced.
Supplier Management – Inverloch Fish & Chips only do business with suppliers that share our commitment to social responsibilities. We closely work with our suppliers to ensure the procurements are sustainable.
Transparency
We ensure transparency and food traceability by collaborating with local food and drink suppliers. A detailed daily log for ingredients is well kept for records. We have an open kitchen where our customers and government officers can monitor our practices closely. We maintain a good level of transparency and stay open to everyone’s voices. In that way, we offer guests a flavoursome, healthy menu that is less impactful on our planet.
At Inverloch Fish & Chips, we envisage a community of responsible and educated citizens who are environmentally conscious, practice social responsibility in their daily lives, and inspire others to do the same. We commit to operating in a socially and environmentally responsible manner whilst maximizing the total benefits of diversified stakeholders. We strive to be a leader in corporate citizenship and take our social responsibilities in empowering our employees and customers, seeking to enrich the quality of life for our local community and serve as a good steward of society and the environment.
We are very grateful for the fantastic support we receive from our customers and are proud of all the people that have worked very hard for us over many years. All the efforts we made together with our valued customers in promoting sustainability are for the future of our planet, and we sincerely invite the visitors and residents at Inverloch to join us on the journey.
